I was waiting for a boat to arrive this arvo (hoping that it wasn't destroyed in the great australian tsunami of 2010) so I had about three flicks of a little home made fly, it got smashed this little trooper.
At 58cm he was size but I let him go anyway, little bugger fought like a champion and I figure letting him go should win me a few brownie points with the fish gods. The lucky little basterd would have made wicked barra burgers too!

We gemtlemen like them as fillets with a crisp chardonnay for accompaniment. I suppose you put them through the food processor like the Vietnamese? On the beach where you caught them, before the Fisheries man can come along and measure anything?

Have you no shame, man?

My good man, I understand that you "gemtlemen" have particular tastes, that your palette is so refined and well cultured that the very thought of the foods of commoners is offensive to your delicate sensibilities... But I assure you; I have had barra fillets grilled with a crisp chardonnay (unwooded of course), comfit with Jerusalem artichokes and tarragon, with Semillon sauvignon, shallow fried in lescure butter with white truffle and Verdelho, baked, broiled, steamed, seared, poached and I dare say nearly any fancy pants way you can think of, with enough Plonk to drown a busload of Frenchmen. I’ve also had barra stuffed with grass, wrapped in bark, baked in the dirt and washed down with emu export...
I'll telk ya what though; nothing beats fresh Barra, maybe dusted with Keithy's secret herbs and spices, between two pieces of bread, a bit of tomato and something green, washed down with whatever the hell you want.

Us working folk may not be fancy but we know what makes us happy!

Actually, unless it's sea-run I wouldn't cross the road for barra, Tends to taste of mud.

It does have that tendency, hence the KP special spice mix, invigorates the senses and disguises the nuance of swamp muck.

It is a good idea to soak any fresh water fish in salty water in the fridge overnight and it will get rid of the muddy taste. I dont fish the fresh now but I used to fish for a lot of impoundment Trout back in England.
